The cashew c raw cashews base is mixed with rich coconut cream and has a hint of tanginess from lemon 1 c filtered water1 pint strawberries juice. Making mini tartlets rather than one large one cuts down on the chilling 1 can coconut milk time considerably, but the recipe can scale up to a full 9-inch round pie tin for1 Tbsp lemon juice a nice Strawberry Cheesecake.2 Tbsp maple syrup c macadamia nuts c dried coconut, shredded D I R E C T I O N S Place the can of coconut milk in the refrigerator overnight. Place the c dates, pitted water and cashews in a bowl and soak overnight as well.(about 10 large dates)1 Tbsp coconut oil Place the pitted dates, macadamia nuts, coconut oil, and dried coconut into the food processor and blend until the mix is a chunky paste. When pinched with your hand it should stick together in clumps. Portion the mixture into four balls and press into the tartlet molds, leaving a hollow in the center for the filling.Carefully remove the coconut milk from the refrigerator, being sure not to shake it. Open the can and scoop the coconut cream that has solidified on top of the milk.Save or freeze the remaining milk for Lemongrass Tom Yum (page 75).Remove the stems from 1 cups worth of the strawberries.Drain the cashews completely. Place them in the blender with the coconut cream, maple syrup, lemon juice, and the de-stemmed strawberries. Blend on high speed until smooth.Pour the mixture into each tartlet mold and place in the refrigerator for at least 1 hour.When chilled and firm, remove the tartlets from the molds. Slice the remaining strawberries, fan them on top of the tartlets and dust with additional shredded coconut. N O T E These tartlets can be made ahead and frozen.
